This Koshu sake is made by a brewery with an over 350-year history which has returned to traditional methods.
The work of brewing sake which has continued through the generations is divine work, and the water used, which originates from Mt. Fuji, supports the brewing. In addition, a design motif of the Yata no Kagami (the eight-span mirror which is one of Japan’s three sacred treasures) has been used since the brewery’s founding.
Maintaining a close connection with the local area and utilizing local ingredients, the brewery produces its sake with care alongside a sense of the sacred.We hope you will experience Japanese culture through this sake brewed with a focus on the fundamentals.

Special Junmai Daiginjo Sasaichi

1,800 ml: 10,000 yen (plus tax), 720 ml: 5,000 (plus tax)

Made from Yamada Nishiki sake rice milled to 35% and brewed carefully with a long, low-temperature fermentation cycle using #9 yeast. Has the gentle and distinctive floral aroma of ginjo sake paired with a crisp and smooth mouthfeel, an elegant sweetness reminiscent of Japanese refined wasanbon sugar, just the right amount of savory flavor from the rice, and a natural tartness in the finish. The aftertaste has a mineral quality from that lingers like clear water.

Sasaichi Junmai

300 ml: 477 yen (plus tax)

This Sasaichi is a junmai (no added sugars or alcohol) sake made with 100% Yamanashi rice.
Prepared with one of Japan’s most prestigious waters, gozensui (water used by the Emperor of Japan) originating from Mt. Fuji. Has a gentle and refreshing aroma with tart, smooth, and savory flavors in perfect balance. Its light and crisp nature make it perfect to pair with meals.

Sasaichi Junmai Nama

300 ml: 477 yen (plus tax)

This Sasaichi is a junmai (no added sugars or alcohol) sake made with 100% Yamanashi rice and sold nama (unpasteurized). Our Junmai nama never undergoes heat treatment at any time during the brewing process. It has a fresh and fruity aroma with the distinctive savory flavor of nama sake, and can be enjoyed with various food pairings.

Sasaichi Koshu Shikomi Shiroyata

1,800 ml: 1,718 yen (plus tax), 720 ml: 859 (plus tax)

This sake is a Koshu shikomi (preparation) made in Yamanashi after Sasaichi Sake Brewery returned to traditional techniques.
Sake brewing is sacred work we have continued through the generations, and the special water originating from Mt. Fuji which we use in our preparations supports these efforts. Since the establishment of Sasaichi, we have continually used the Yata no Kagami (eight-span mirror, one of Japan’s sacred treasures) motif in our logo. This sake can be enjoyed in a variety of drinking styles, including serving both hot and cold.
